Delicious and nutritious light red kidney beans are the magical ingredient in this Cinnamon Banana Bean Bread.

Ingredients

  • 1 cup cooked light red kidney beans

  • 2 ripe bananas

  • 3 eggs

  • 2 tsp vanilla extract

  • ¾ cup canola oil

  • 2/3 cup light brown sugar, packed

  • 2 cups flour

  • 1 and ½ tsp baking soda

  • 2 tsp ground cinnamon

  • Pinch salt

  • ½ cup toasted pecans (optional)

Directions

  • Place all ingredients into a powerful blender and blend until almost smooth.
  • Pour batter into a bread loaf pan lined with parchment paper.
  • Bake at 375 for 55-65 minutes until a toothpick comes out clean.
  • Enjoy alone or with honey butter, hazelnut spread or jam.
