Ingredients
1 cup cooked light red kidney beans
2 ripe bananas
3 eggs
2 tsp vanilla extract
¾ cup canola oil
2/3 cup light brown sugar, packed
2 cups flour
1 and ½ tsp baking soda
2 tsp ground cinnamon
Pinch salt
½ cup toasted pecans (optional)
Directions
- Place all ingredients into a powerful blender and blend until almost smooth.
- Pour batter into a bread loaf pan lined with parchment paper.
- Bake at 375 for 55-65 minutes until a toothpick comes out clean.
- Enjoy alone or with honey butter, hazelnut spread or jam.
