Ingredients for French Onion Mayocoba Beans:

  • 1 medium white onion, sliced thin, then caramelized
  • 1 cup cooked Mayocoba beans
  • 4 sprigs fresh thyme
  • 10.5 ounce can French onion soup
  • Baguette slices, cut a half inch thick
  • 8 slices provolone cheese, quartered

Instructions for French Onion Mayocoba Beans

  1. In a small oven proof skillet, add olive oil over medium heat and caramelize your white onion slices.
  2. Toss in the cooked beans and sauté until well combined.
  3. Remove skillet from stove and pour in the can of French onion soup.
  4. Sprinkle fresh thyme from 3 sprigs over the soup mixture.
  5. Lay baguette slices around the skillet to cover the mixture.
  6. Arrange cheese quarters over the bread to fully cover every corner and crevice.
  7. Bake at 350 for 30 minutes until bubbly and crispy brown.
  8. For extra crispiness, place skillet under the broiler for a few minutes.
  9. Top with fresh thyme and serve.
